Ingredients:
1 cup mixed dry fruits (such as almonds, cashews, walnuts, pistachios, raisins, dates, figs)
1/2 cup desiccated coconut
1/4 cup ghee (clarified butter)
1/2 cup jaggery or powdered sugar (adjust to taste)
1/2 teaspoon cardamom powder
A pinch of saffron strands (optional)
Chopped nuts and edible silver leaf for garnishing (optional)
Instructions:
Preparation: | Dry Fruit Laddu recipe
Chop the mixed dry fruits into small pieces. You can use a combination of your favorite nuts and dried fruits. Keep them aside.
If using dates or figs, make sure to remove the seeds and chop them finely.
Dry Roasting:
Heat a pan on low flame and dry roast the chopped nuts for a few minutes until they turn slightly golden and aromatic. Make sure not to burn them. Remove from the pan and set aside.
In the same pan, dry roast the desiccated coconut until it turns light golden in color. Remove and set aside.
Grinding:
Once the roasted nuts and coconut have cooled down, grind them in a food processor or grinder to a coarse powder. The texture should be a mix of fine and slightly chunky.
Mixing:
In a separate pan, melt the ghee on low heat. Add the chopped dates or figs (if using) and sauté for a minute or two until they soften and blend with the ghee.
Add the ground nut and coconut mixture to the pan and mix well with the ghee and softened dates/figs.
Sweetening:
Add the jaggery or powdered sugar to the pan and continue to mix. The heat will help the sweetener melt and blend with the mixture. Adjust the amount of sweetener based on your taste preferences.
Flavoring:
Sprinkle cardamom powder and saffron strands (if using) over the mixture and give it a final mix. The aromatic spices will infuse the laddus with a wonderful fragrance.
Shaping Laddus: | Dry Fruit Laddu recipe
Allow the mixture to cool down slightly, so it's comfortable to handle. While it's still warm, take a small portion and shape it into a round laddu by gently pressing and rolling between your palms. Repeat with the remaining mixture.
Garnishing:
If desired, garnish the laddus with chopped nuts or a small piece of edible silver leaf for an extra touch of elegance.
Set and Serve: | Dry Fruit Laddu recipe
Let the laddus cool down completely before storing them in an airtight container. This will help them set and hold their shape.
Enjoy these delicious and nutritious Dry Fruit Laddus as a snack, dessert, or energy-boosting treat whenever you need a quick pick-me-up.
